Cucumber Kim Chi

I've made this before and also the Bok Choy Kim Chi and they are wonderful.  A couple of tips that are different than his recipe: I only used 2 tsp sea salt and I used cayenne pepper instead of red pepper.  I couldn't decide (in the original recipe he posted a couple of years ago) what he meant by red pepper.  That's a rather broad term in cooking!  I also omitted the honey because I don't like sweetened Kim Chi.
