This sounds more like vegetable noodle soup to me.  But whatever.  In my family, potato soup had a milk base, with some chopped onion and hunks of potato and not much else (salt and pepper to taste, of course). When we wanted to get really fancy, we added some finely chopped celery!

But whatever floats their boat.  AND - - whatever they want to call it, it sounds delicious.
