You can also use canned peaches if the real thing isn't available. But the real peaches add much more flavor, color the juices a beautiful pink, and are better for you than canned. But ya gotta do what ya gotta do, and work with whatever you have.
This is just one of many recipes out there. Some cobblers are made with dough that is just dropped over the top of the prepared peaches in a pan, and some are made with what is almost akin to a pie crust. Those are a lot more work, and my family likes the "drop" kind better. Make your own batter to drop, however, and never use that ucky bisquick and junk like that. Ewwww. Also, I would add some nutmeg along with the cinnamon and omit the cardamom unless you're really of fan of that stuff.
