I thought this recipe used real apples but it only uses apple juice (which I never have on hand) and my family and I don't care for cranberries, dried or otherwise, so I just used a mixture of dried fruits from our local health food store and it was pretty darn good! It took me a long time to figure out what risotto even was! I'm Swedish so I started reading recipes about arborio rice and all they ever mentioned was risotto. Kept thinking I had gotten the wrong page so I re-entered the term into the search box again, and still I was seeing risotto all the time.
So I went to The Spruce Eats and found a page explaining what exactly each one is. I'll post that below, too, after the recipe. (Risotto takes some time and patience to cook and my DH isn't all that fond of any kind of rice, so I only used it in this one breakfast recipe so far). We'll see about using it in other dishes later on, but I think it's just as easy to use plain old brown rice which is my favorite. In my old age I've gotten so I like to use quick and easy recipes. I always prefer to cook from scratch, and there are many easy, quick-fast recipes out there. Lots of mexican dishes especially. We aren't wild about all of that either, but we will eat mexican dishes if they don't require the oven this time of year.
