Tangerine dressing for salads

This would be great on a green salad, as well as a combination of watermelon, mandarin oranges and halved red grapes.  Easy and sounds wonderful for a hot summer day.


  • DRESSING:
  • 1/2 cup olive oil
  • 1 teaspoon grated tangerine or orange peel
  • 1/4 cup tangerine or orange juice
  • 2 tablespoons balsamic vinegar
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground pepper

 Stir together until well blended and pour over any type summer salad.  *** My family is not big on balsamic vinegar so I would likely just use plain old white vinegar.  As much as people tell you white vinegar is not good for you, it's all in their heads.  Vinegar is vinegar, and if you can get organic white vinegar, so much the better.  I would much rather use white vinegar in summer salads than the overpowering apple cider or balsamic vinegars any day of the week!
