Dutch processed cocoa vs natural cocoa

By "natural" in this article, I assume they are referring to raw cocoa.  I buy my raw cocoa powder (and the nibs) at our local food co-op which sells mostly organic stuff.  This article is long and has lots of good information.  Great stuff for a cook to know!
