COFFEE AND SPICE DROPS
Mix together thoroughly:
1 cup soft shortening (I don't use shortening, so I'll probably combine homemade lard and coconut oil)
2 cups brown sugar (lots I know, but the holidays are comin'! And remember, YOU aren't getting both cups in one cookie . . . )
2 eggs
Stir in:
1/2 cup cold black coffee
Sift together and stir in:
3 1/2 cups all purpose flour (I use unbleached, so I may use a little less flour)
1 tsp soda
1 tsp salt
1 tsp nutmeg
1 tsp cinnamon
Chill at least 1 hour. Drop by rounded tsp's about 2" apart on a lightly buttered baking sheet or use parchment paper. Bake until set ... just until when touched lightly with finger, almost no imprint remains. Slightly browned edges.
Oven: 375° - 400°
Time: bake 8 to 10 minutes
Amount: About 6 dozen 2 1/2" cookies
