Chef John's eggnog

I've never made eggnog with "cooked" eggs before, but this sounds good.  A little extra work, but good.  I might give this a try.  We usually use Bushmills Irish Whiskey in eggnog, or Cap't. Morgan's Spiced Rum, depending on what we have on hand or what we're in the mood for.
