Gingerdoodles

The perfect Christmas cookie for exchanges.  I found this recipe today (online), but it's an idea my family has been using since the 1950's. When I make them I usually use my own molasses cookie recipe (which is similar to this one, and I triple the recipe) and use the cinnamon/sugar to dip the tops of the cookies in before baking.  I hardly ever actually roll the whole cookie in the sugar mixture because the bottoms of the cookies get hard when they bake.
