Just like my Mom's Apple Bars

Right down to the cornflakes on top!  (you'll see!).
My Mom didn't roll out the dough, she tore it in half (as instructed) and used her fingers to press it into an 11 x 14 or 15 inch bar pan (you could use a 9 x 13 pan but they'll be a lot thicker.  Then she rolled out the top part of the crust, left the edges pretty raggety and sort of slapped it over the apple filling and pushed down gently.  Bake, cool a bit, glaze and the magic is done..... OH YUM!  Lord I remember these so well, I can't wait to bake a batch.  Gotta get some apples at the store first, though.  You can make peach bars the same way, leaving the peaches in fairly thick slices, not too thin, the apples have to be a bit thinner or they won't get done before the "crust"  burns.

Also, we use pink lady or gala apples for these, the green ones are waaaay too hard.  They're good flavor, but they just don't bake as tender.
