Pizza meatloaf
This is a family favorite and even my Dad would eat it. He HATED pizza.
- PIZZA MEATLOAF RECIPE

- 1-2 pound lean ground beef (depending on how many you're feeding)
- 1 cup pizza sauce, divided
- 1/2 cup bread crumbs (dried dices of leftover bread then roll over them with a rolling pin to crush), panko crumbs, or use pre-made dressing crumbs like the kind you use on salads and crush them with a rolling pin, too)
- 2 eggs, whisked
- 1 teaspoon oregano
- 2 tablespoons dried parsley
- 1/2 to 1 whole teaspoon Italian seasoning mix (I use a blend from the local organic health food)
- 1/4 cup freshly grated Parmesan cheese
- 8 ounces (1 cup) shredded or sliced Mozzarella or Provolone cheese, divided
Instructions
- Mix together eggs, bread crumbs, salt, oregano, parsley, Italian seasonings, parmesan, and 1/3 cup pizza sauce together until well combined.
- Add in ground beef and gently combine, being careful to not overmix your meatloaf mixture.
- Roll with rolling pin into a rectangle (about 1 inch thick") and top with 2/3 cup mozzarella or provolone cheese.
- Pat meat into a loaf shape, around cheese (so the cheese is in the middle, not the edges).
- Place meat on broiler pan or into a loaf pan and top with remaining sauce and cheese. If you use a loaf pan, you may have to pour off grease, periodically, depending on the quality of meat used.
- Bake at 350 to 375 for 1 hour, checking often.
