I made this last week but I definitely had to finish it by putting it into the oven for the last 1/2 hour of baking. I can't stand the thought of undone chicken - ewwww. I only use organic meats of all kinds, but still I don't wanna eat it raw.
I used a packet of onion soup mix rather than just onion powder. I took my rolling pin and went over the dried onions in the soup mix first to break them up a little. Otherwise it's pretty oniony. I also added some real chopped white onion to the panko crumbs because I dredged the breast pieces into the flour/panko mixture before I transfered it to the pan to go into the oven.
I served it with homemade potato wedges and a mixture of peas, carrots and cauliflower chunks which I steamed. It made a good, hearty meal and my grandkids loved it. Always a good sign!
