Roasted veggies

I love roasted veggies, especially brussels sprouts, but my husband doesn't even like the smell of sprouts much less the taste, so I have to make these when he's out of town!  I don't care for turnips or parsnips, but almost anything roasted in bacon fat is delicious!  I use the roasted onions and red bell peppers in other dishes, so I roast bunches of them at one time and put them in freezer bags to keep for a while.  Lots easier that way!  I usually roast the red bell peppers (or any peppers for that matter) until they burn just slightly.

If you don't like or don't have bacon grease, you can also roast veggies in real butter (not margarine, yuk) but you have to watch things a lot more closely when they are roasting in butter - - it burns more easily even at low oven temps.
