There is nothing in this world that beats the taste of french fries made with REAL lard from a good source. I also love it for making homemade pie crusts - it's incredible.
We used to be able to buy it locally, but of course the state know-it-alls put a stop to that because too many of us were showing signs of being TOO HEALTHY. Now the real organic stuff is almost impossible to find.
What a damned shame. I still have some in my deep freeze and I'm using it sparingly because when it's gone I'm not sure where to find more. Getting critical now.
When I was growing up in a small farm/ranch community, my best friend's dad raised pigs and her mom made these things called crispy's or cracklings (cracklin's). They were just small bits of pure pork fat (not like the stuff that comes from bacon, and NOT pork rinds) that were fried to a golden brown and rather crunchy. I don't know if there was any seasoning on them but I don't think so unless maybe a little salt and pepper. No meat involved, just pork fat. I used to look forward to visits to her house after they butchered a hog or two because I knew her mom would be making these. What a treat back then! Kids today would turn up their noses at it and their parents would likely be horrified at the thought - - because they know NOTHING about nutrition and the human body. They are afraid of healthy fats and that's what's causing a lot of our illnesses and food allergies, etc., these days. It would be difficult for anyone to convince me of anything else.
