These sound good and easy. Get your "stirring arm" ready because you'll be putting it to good use!
You could use any type of cheese, I think, but the cheddar they recommend is really good in this recipe. I think the blend of mexican cheese (different types mixed together, depending on what company brand name you buy) is really good, too.
I ate these crackers recently with homemade cauliflower/celery soup and it made a wonderful "cold day" lunch.
