This is not new to me, my family does this often although we do not call ours a frittata, we just called apples n' eggs. My family knew what we meant when we called it that even if others may not. It's just a lot less words!
We make ours pretty much like this recipe, and the bacon is an absolute must if you want this to taste like it's supposed to taste. Otherwise there's nothing to offset the apples, IMO. The cheese and apples isn't weird, no matter what you may think at first, because lots of people eat cheese with their apple desserts. This isn't a dessert, it's a breakfast dish, but I suppose you could use it as a dessert if you were of a mind to do so.
Anyway this combination is great together.
