LEMON THYME COOKIES
Ingredients:
- 2 1/2 cups flour
- 1 teaspoon cream of tartar
- 1 cup unsalted butter, softened
- 1 1/2 cups sugar
- 2 eggs
- 3 tablespoons fresh lemon thyme, finely chopped or .75 oz. dried lemon thyme
Directions:
Sift together flour and cream of tartar.
Cream the butter with the sugar.
Add the eggs and mix well.
Blend in the flour until well incorporated.
Stir in lemon thyme.
Chill for at least 2 hours.
Roll into balls the size of small walnuts.
Bake on greased cookie sheets or a silpat.
Bake 10-12 minutes at 350°.
Edges may brown slightly.
