We called it Knephla

My maternal gramma was the BEST german food cook I've ever known.  We used to talk her into making these whenever she was at our house to visit.  I remember her holding the dough in her hand and using one of Mom's paring knives to cut off small bits of dough and drop it into the cooking soup.  YUM!  We didn't make the soup the way it's shown in this article, but whatever you can use as a liquid base is great for your taste!

This recipe came from an AI based entry, so I just copied and pasted it here (which is why it looks funny in some places), but I only really use the recipe for the dough and make my own soup.  We also have used this on bean soup, or bean and ham soup, too.  =16px=16px=16px=16px=16px=16px=16pxGerman Strudels with noodle soup (often known as Strudla or Knoephla) is a traditional German-Russian dish. It features a rich, comforting meat and potato stew topped with rolled homemade egg noodles that steam into fluffy, dumpling-like "strudels." Portions of the rich broth are then served as a soup. [1, 2, 3, 4, 5] =16px=16pxIngredients=16px=16pxFor the Dough:

 • =16px=16px=16px2 large eggs

 • =16px=16px=16px\(\frac{1}{2}\) cup warm water

 • =16px=16px=16px\(\frac{1}{2}\) tsp salt

 • =16px=16px=16px\(2 \frac{1}{2}\) to 3 cups all-purpose flour [1, 2, 3, 4, 5]

=16px=16pxFor the Stew & Strudels:

 • =16px=16px=16px\(1 \frac{1}{2}\) lbs bone-in, skin-on chicken (thighs or breasts) OR cubed pork/sausage

 • =16px=16px=16px1 large onion, diced

 • =16px=16px=16px4 medium potatoes, peeled and quartered

 • =16px=16px=16px2 carrots, chopped

 • =16px=16px=16px4 cups chicken or beef broth (plus more water)

 • =16px=16px=16px\(\frac{1}{2}\) cup butter, melted (or vegetable oil/bacon drippings)

 • =16px=16px=16pxSalt and black pepper to taste

 • =16px=16px=16pxChopped fresh parsley [1, 2, 3, 4, 5]

=16px=16pxInstructions =16px=16px1. Prepare the Noodle Dough

 • =16px=16px=16pxIn a large bowl, whisk together the eggs, water, and salt.

 • =16px=16px=16pxGradually add the flour, 1 cup at a time, until a soft dough forms.

 • =16px=16px=16pxTurn out onto a floured surface and knead for about 5-8 minutes until smooth and elastic.

 • =16px=16px=16pxShape into a ball, cover with a warm, damp towel or plastic wrap, and let it rest for 30-60 minutes. [1, 2, 3, 4, 5]
=16px=16px2. Start the Stew Base

 • =16px=16px=16pxIn a large, heavy-bottomed Dutch oven, melt a few tablespoons of butter or oil over medium-high heat.

 • =16px=16px=16pxAdd your seasoned chicken or meat and brown on all sides for 10-15 minutes. Add the diced onion and sauté for another 5 minutes until translucent.

 • =16px=16px=16pxPour in enough boiling water or broth to just cover the meat. Cover the pot, reduce the heat to low, and simmer for 15 minutes.

 • =16px=16px=16pxAdd the potatoes and carrots to the pot. Add a bit more salt, cover, and let simmer for 10 minutes. [1, 2, 3, 4, 5]
=16px=16px3. Assemble and Steam the Strudels

 • =16px=16px=16pxWhile the stew simmers, divide the dough into 2 equal balls. On a floured surface, roll each ball out into a very thin rectangle or circle (about \(\frac{1}{8}\)-inch thick). [1, 2]

 • =16px=16px=16pxBrush the dough generously with melted butter or oil. [1, 2, 3, 4]

 • =16px=16px=16pxRoll the dough up tightly into a jelly roll, then slice the roll into 1-inch thick segments. [1]

 • =16px=16px=16pxCarefully lift the lid of your Dutch oven (try not to let too much steam escape) and place your cut noodle pieces on top of the cooking potatoes and meat. [1, 2]

 • =16px=16px=16pxCover the pot securely and let the strudels steam over a medium-low heat for 20 minutes. Do not peek! [1, 2]
=16px=16px4. Serve as Soup

 • =16px=16px=16pxRemove the cooked strudels to a warm platter. Remove the meat, potatoes, and vegetables to serving bowls.

 • =16px=16px=16pxTo the flavorful drippings and liquid remaining in the pot, stir in the remaining broth and bring to a rapid boil for 5-10 minutes to create a rich gravy/soup base. Taste and adjust salt and pepper.

 • =16px=16px=16pxLadle the hot, rich noodle soup into bowls, and serve alongside the strudels, chicken, and vegetables.

Re: We called it Knephla

Well - - that certainly didn't work out very well, did it?  Rather than erasing the stuff I've already posted I'm just going to leave it there, because the dough part of the recipe is accurate, it's just difficult to read.

Here's another version.  I hope this link comes through, my computer is wonky as hell today.

http://www.mennonitegirlscancook.ca/2008/06/rolled-up-homemade-noodles-kielke-with.html

This is a wonderful site for looking up recipes, all kinds of recipes.  I saved it also to my email so I can join their community and continue to get great recipes all year.
