I made this yesterday but I added chopped cabbage and I had to used canned carrots (all I had on hand) but it was still good for lunch today. The cabbage adds a lot to the flavor. Potatoes are kinda dull but I love them in almost anything, ditto for carrots and cabbage. That's why I really like St. Paddy's day because I love corned beef and cabbage and I also like fried onions and cabbage, almost any way you can think of to make it I like it because it's also very good for you. So are Brussels Sprouts (which I have in the oven as we speak!).
