I love coleslaw but not the creamy kind. I like the light vinegary kind. That's the way my Mom made it so that's how I make it, too. Also, I don't love carrots because I find them hard to chew but if I use my hand grater I should be able to shred them fine enough to use.
I looked through hundreds of recipes before I found this one and it sounds GOOD. Dijon mustard, celery seeds - - YUM!
