I LOVE Mexican food, have since the 7th grade when we moved to SCA and it was much more popular there than in the Northern Great Plains where I grew up.  Up here it's mostly german and swedish foods, not anywhere near mexican!!!

I still love enchilada's (cheese ones especially)  I love taco salads, I have a layered tortilla pie recipe that is just wonderful.

So, if you like Mexican food, try a couple of these just for kicks and a change in your kitchen habits.
