Homemade Fig Newtons

I like fig Newton's but I think this recipe would be good also using roasted strawberries or blueberries, etc., and maybe add a bit of arrowroot to thicken the roasted fruits. I didn't have any dried orange peel on hand so I skipped that part.

I have a small Two-Person sized crock pot and I used that to roast my strawberries and it worked out ok, but in the oven (or in a turkey roaster) is best.  I added 1 TBSP real sugar and 1 TBSP erythritol and it worked out great even for our diabetic friend who had his with non-sugar ice cream.  I also added cinnamon and I probably used more than most people would, but cinnamon is good for diabetic people and I knew our friend was coming for supper so I wanted him to be able to enjoy dessert also.  He did!
