Wild rice soup

I made this a couple of weeks ago and it was really good.  My DH is nutz about wild rice.  I like it but I usually like it mixed with brown rice because it's just a bit too "wild" for me!  But this soup is excellent and since we've been having below zero days for the past couple of weeks, soup is the best thing I can think of to ward off the chills.  In the evening I make hot chocolate (sometimes with a dash of Irish Whisky in my cup!) and that really helps, too. 



WILD RICE SOUP

1/2 pound bacon (I make a whole pound and save the rest for other stuff)
1 onion, diced
1/2 c. chopped celery
3 TBSP butter (real)
3 TBSP flour
1/2 tsp thyme
1/2 tsp Hungarian paprika
1 TBSP Worcestershire sauce
10 3/4 oz. chicken broth (about 1 1/2 cups)  I use the organic EPIC brand which I order from amazon
2 cups milk
1 cup cooked wild rice

Fry, drain and crumble the bacon and set aside.  Saute onion and celery in butter.  Stir in the flour, thyme and paprika then heat til bubbly. Add the W. sauce, broth and milk, heat this mixture stirring until thickened.  Fold in the wild rice and the bacon and serve immediately. 

We had a spinach salad and a slice of sourdough bread with this and it was an excellent meal.
